WHAT’S COOKIN’?
we enjoy cooking almost as much as we love eating, so swing by every week for a new recipe!
some strange, some plain, but all are guaranteed to be damn delicious.
Focaccia Pizza
DOUGH
Mix 3 cups of tipo 00 flour with a tablespoon of instant yeast
1 1/4 teaspoon of kosher salt
1 teaspoon of sugar or agave
1 1/2 cup of warm water (105° to 115°)
Mix dry ingredients together and add water
Mix by hand until it’s stickyyy. Or use a stand mixer on high for 60 secondsish.
Get a bowl, olive oil it. Move dough into oily bowl, either let it sit for a few hours and let it rise, or let it sit in the fridge for 24 hours, depending on when you’re trying to eat.
Move to an olive oily baking sheet and stretch it to all four corners of a 10”x15” pan. You’re gonna poke it, dimple it, use your fingers to really massage it. Sometimes we add everything bagel seasoning to the edges. Do you though.
Then we’re gonna par bake it at 400° for 20 minutes.
This is the time to make your sauce (details down under)
Pull it out, remove from pan, and let it rest for 10 mins.
Top it with your homemade vodka sauce, cup and char pepperonis and pickled jalapeños. Invite some friends over, pour a glass of whatever your into, and wait impatiently for 10 to 15 to minutes while the pepperonis curl up and the cheese gets a beautiful golden brown.
SAUCE
Large yellow onion, diced finely
6 cloves of garlic
Saute onion and garlic until fragrant and translucent, add and oz and a half of vodka!
Add 2 tablespoons of butter, salt, pepper, a little parsley. Stir and let everything get friendly in the pan.
Add tomatoes and simmer for 30 mins.
Add 3/4 a cup of heavy whipping, add 1/2 a cup of grated parmesan.
Let cool and blend.
